1 tablespoon olive oil
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried thyme
½ teaspoon garlic powder

Preheat the oven to 425 degrees F. Place rack in the middle of the oven. Line a large baking dish with foil and lightly spread a little olive oil around.

Arrange the salmon fillets on the dish, skin side down. Brush the tops with more olive oil, and sprinkle with the salt, pepper, thyme and garlic.

Bake for 10 minutes or until opaque and cooked through and internal temperature reaches 135 degrees F.  Drizzle salmon w/lemon and sprinkle w/ crushed black pepper, capers and sea salt.

Avocado Breakfast Wrap

Breakfast Wrap1 Pure Wrap
2 eggs
¼ teaspoon pure cornstarch
1 avocado
½ cup pico de gallo
Bacon or sausage

Scramble 2 eggs (slowly stir for fluffiness and add small pinch of cornstarch for creaminess - pure corn starch is gluten free but not all brands are pure)

Arrange the eggs in the middle of the wrap and position the sliced avocado, pico, bacon or sausage across the top.  Arrange the eggs across the wrap diagonally and then add the toppings.  Tuck the bottom triangle in over the eggs and then wrap the left and right sides of the wrap over each other.

Make it a Burrito!

Once you have all the fillings in place, pull the bottom half of the wrap over to meet the top half. Now, pull the wrap back towards itself. This will form the filling into a roll. Fold the right edge in toward the middle and then repeat on the left.  With both ends folded, tightly roll your Pure Wrap until you have a perfect, beautiful breakfast burrito.
